I Want "S'more" Cake Bars

My little man had to come up with a dessert that he could (mostly) make by himself to take to the Blue and Gold Banquet.  This is a big deal banquet done each year to celebrate the birthday of the Boy Scouts.  Our Den decided to go with a camping theme.  What goes better with camping than s'mores?!


A quick search on allrecipes.com (which I love!) came up with a number of desserts that would work.  We decided to go with this one:   S'more Crumb Bars.  I changed the name to "I want s'more cake bars" because we really were supposed to make some type of cake.  Ok.  I cheated.  No one seemed to mind when they wolfed them all down.!

You start by taking graham crackers and crushing them really, really small.  I put them in a big Ziploc bag and let the kids go to town. You mix this with sugar and melted butter and press into a pan like a pie crust.  On top of that, you sprinkle chocolate chips and marshmallows.  There is a very good chance with the kids doing this that some of these will fall casualty.........to their mouth!

On top of this you sprinkle the rest of the graham cracker crumbs and back at 375 for about 10 minutes.  When done, press with a spatula so they become more compact.  Cut them in squares after they cool completely.  The fridge really helps with this!

Although we did not win "Best Camping Theme" I am pretty sure our dessert was one of the first to go.  We will probably make these for family gatherings because they are such a crowd pleaser!
